A simple, rustic fruit crisp that lets seasonal plums shine. The nutty sweetness of freshly milled Palouse Heritage White Sonora flour pairs beautifully with oats, brown sugar, and cinnamon — creating a golden, buttery topping over juicy baked fruit.

Topping
½ cup Palouse Heritage White Sonora flour
½ cup oats
½ cup brown sugar
⅛ teaspoon salt
¼ cup melted butter or margarine
Filling
3 cups sliced plums
1 tablespoon Palouse Heritage White Sonora flour
2 tablespoons sugar
1 teaspoon vanilla extract
½ teaspoon cinnamon
Directions
Preheat oven: 350°F (175°C).
Prepare filling: In a medium bowl, combine sliced plums, flour, sugar, vanilla, and cinnamon. Mix gently and pour into an ungreased 1½-quart baking dish.
Prepare topping: In a separate bowl, combine flour, oats, brown sugar, salt, and melted butter. Stir until the mixture is crumbly.
Assemble: Distribute the topping evenly over the plum mixture.
Bake: 45 minutes, or until the top is crisp and golden brown and the fruit is bubbling.
Serve warm — plain or with vanilla ice cream or whipped cream.
